Mini Turkey Meatloaf

It's a quick and easy weeknight meal.

There’s something so comforting about a slice of meatloaf with some fluffy mashed potatoes. I rarely make meatloaf anymore because is takes a while to cook, but I came up with an easy way to get dinner on the table in no time. I like to use turkey in this recipe but you can use beef if you like. The turkey comes out moist with the addition of salsa and applesauce and the kids love having a little meatloaf all to themselves.

I usually add one-half cup of unsweetened applesauce to the mix, but if you don’t have any, it still comes out good. I’ve done it with and without the applesauce. Usually the applesauce adds a little moisture to the meatloaf.

INGREDIENTS

1 pound of ground turkey

½ green pepper, chopped

½ onion, chopped

¼ cup olive oil

¼ cup chunky salsa

½ cup unsweetened applesauce

1 cup crackers, ground in food processor

2 garlic cloves, minced

½ tablespoon Italian seasoning

Topping:

¼ cup ketchup

¼ cup barbecue sauce

¼ cup Heinz 57 Sauce

INSTRUCTIONS

1. Preheat oven to 375°F degrees.

2. Spray a muffin pan with PAM or olive oil.

3. Place turkey meat in a large bowl.

4. Heat olive oil in non-stick pan over medium heat on the stove.

5. Add the onion, green pepper and saute until onion is clear and soft.

6. When cool, add to the turkey along with the next five ingredients. Mix well.

7. Using an ice cream scoop, fill each muffin with the turkey mixture.

8. Mix topping ingredients and top each meatloaf with some of the mixture.

9. Place in oven and bake for approximately 20 minutes.
