Kale has been recognized as one of the healthiest foods that we can eat. Most people don’t really know of all the different ways to use kale. I’ve always thought it had to be boiled until soggy. But after researching different recipes, I came up with a wonderful kale salad that can be made to your own liking. The recipe here calls for certain ingredients, but you can add whatever fits your taste. You can make this ahead of time and store in the refrigerator.
Adding kale to your diet once or twice a week can be a great benefit. So try different ways to use it and add to salads, soups and even pastas.

Healthy Kale Salad
1 bunch of kale, stems removed

2 garlic cloves, minced
1 teaspoon of Dijon mustard
2 tablespoons lemon juice
½ cup extra virgin olive oil
½ cup dried cranberries
½ cup edamame
¼ cup sunflower seeds
salt and pepper
1. Clean kale and chop into small pieces.
2. Whisk garlic, Dijon mustard, lemon juice and olive oil in bowl.
3. Season with salt and pepper and toss in the kale
4. Add the cranberries, edamame and sunflower seeds.
5. Mix well.
