Pistachio Crusted Salmon

It's a healthy way to use up pistachios.

I recently shopped at Costco and was taken in by a huge bag of pistachios. They're a great snack and so healthy. The problem is using up all of them.

How about salmon with pistachios?

This dish is so easy and delicious. Salmon is a wonderful fish that can be cooked in so many ways. I try to cook it at least two times a month.

If you keep certain ingredients in your pantry you can make this with any type of nut or fish. It will even work with chicken or pork tenderloin. Dijon mustard and honey are always a good thing to keep on hand. They’re great for making dressings for salad and marinades.

This dish can be made the day before and kept overnight in the refrigerator.

Pistachio Crusted Salmon

4 salmon fillets without skin (approximately 4-6 oz. each)

1 tablespoon Dijon mustard

2 tablespoons honey

1 clove of garlic (minced)

2 tablespoons soft butter

Pinch of salt and pepper

½ cup panko bread crumbs

½ cup coarsely ground pistachios

1. Preheat oven to 400ºF.

2. Place salmon fillets on a foil-covered baking sheet and season with salt and pepper.

3. Mix mustard, honey, garlic and butter in a small bowl.

4. Grind pistachios in a food processor or chop until coarse. Don't grind too much. You want a little crunch.

5. Mix the pistachios with the panko bread crumbs. You can use regular bread crumbs if you don’t have panko.

6. Coat the fillets with the honey mixture.

7. Press the pistachio mixture on top of the honey mixture and coat the fillets generously.

8. Place in the oven and cook for about 12-15 minutes or until the salmon is cooked through.

Serve with wild rice, broccoli or a nice salad.
